Cozy Autumn Comfort: My Ultimate Secret-Ingredient Chicken Pot Pie
There is officially a chill in the air, the leaves are turning, and my kitchen is officially in full autumn mode. When the crisp sweater weather hits, nothing feels more like a warm hug than a golden, bubbly, homemade chicken pot pie.

Over the years, I’ve taken inspiration from two of my favorite recipes—combining the rich, velvety roux and tender potatoes from one with the delicious aromatics and classic veggies of the other.
But my absolute favorite life hack? Using shredded rotisserie chicken! It saves so much time, keeps the chicken incredibly juicy, and makes this cozy dinner feel effortless after a crisp fall day.
And the real secret to making this pot pie taste like magic? Thyme. Trust me, don't skimp on the thyme! It brings out that earthy, cozy, cottage-kitchen aroma that fills the whole house while it bakes.

Ingredients
2 cups shredded rotisserie chicken
1 double pie crust (store-bought refrigerated crusts work amazingly well here, or your favorite homemade recipe)
1 cup potatoes, peeled and cut into bite-sized chunks
3/4 cup carrots, peeled and sliced
1/2 cup celery, sliced (I hate celery so I skip!)
1/3 cup yellow onion, diced
1/2 cup butter (1 stick)
1/2 cup all-purpose flour
1/2 tsp dried thyme (or fresh thyme leaves from your garden!)
1/2 tsp garlic powder
1 tsp salt & 1/4 tsp black pepper (adjust to taste)
1 1/2 cups chicken broth or stock
1/2 cup heavy cream or milk
1/2 cup frozen peas (I also hate peas so I skip!)
1/4 cup frozen corn
1 egg (beaten, for that golden shiny top crust!)
Instructions
Step 1: Par-Boil the Veggies
Place your diced potatoes and sliced carrots in a small pot, cover with water, and bring to a boil. Cook for 5–7 minutes until they are just tender when poked with a fork (don't overcook them or they'll get mushy!). Drain and set aside.
Step 2: Build the Roux Base
In a large skillet or Dutch oven, melt the stick of butter over medium heat. Add the diced onion and celery, cooking until soft and fragrant. Whisk in the flour, salt, garlic powder, pepper, and thyme. Cook for 1–2 minutes, stirring continuously, so no dry flour remains.
Step 3: Simmer to Thick, Velvety Perfection
Slowly whisk in the chicken broth, followed by the cream or milk. Stir often as it comes to a gentle simmer—watch as it turns into a rich, luscious, aromatic gravy!
Step 4: Fold in the Filling
Remove the skillet from heat. Stir in your shredded rotisserie chicken, par-boiled potatoes and carrots, frozen peas, and corn. Taste the filling and adjust salt or thyme if your heart desires! Pro-tip: Let the filling cool slightly before pouring it into the crust so the pastry stays super flaky.
Step 5: Assemble & Bake
Preheat your oven to 425°F (220°C).
Fit one pie crust into a 9-inch pie dish.
Spoon the rich filling evenly into the crust.
Top with the second pie crust, crimp and seal the edges together, and brush the top with your beaten egg wash for that gorgeous golden shine.
Cut 3–4 slits in the top crust so steam can escape.
Place the pie dish on a baking sheet and bake on the bottom rack for 30–35 minutes until the crust is golden brown and the filling is bubbling happily!
Step 6: Rest & Serve
Let the pie cool for 15 minutes before slicing—this helps the gravy set so you get perfect, cozy slices.
Serve it up with a side salad or just enjoy a warm slice all on its own while wrapped in a blanket.
